3 large, ripe bananas
2 1/2 cups rolled oats
1 cup peanut butter (my family prefers chunky)
1/3 cup semisweet chocolate chips
1/4 cup honey
2 teaspoons cinnamon
Pinch of salt

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment.
  • Mash the bananas with a fork in a large bowl. Add the oats, peanut butter, chocolate chips, honey, cinnamon and salt, and stir until just combined. (The mixture may be thick and hard to stir.)

They have no added sugar, no butter/marg and no flour in them and (considering this) taste rather magnificent if I do say so myself! I'll say it now - if you're NOT on a diet then you probably won't think so much of these. They are pretty yummy, but there are probably plenty of nicer recipes (ie. with butter and sugar) if you're not weight watching. I find these to be a really nice, healthy, filling treat though, and I hope you enjoy them too!

2 cups oats (not instant, the proper scotts type)
1/2 cup skim milk
1 egg
2 tablespoons Splenda sugar substitute
1/2 teaspoon vanilla extract

  • Preheat the oven to 180c.
  • Mash the bananas and mix with the oats, milk and egg before adding the remaining ingredients (it just mixes a bit easier and more evenly this way). 1/4 cup neutral oil, such as canola or vegetable oil

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone baking mats.

~2 ounces of either dark chocolate, white chocolate, or caramels, chopped (for drizzling, optional but highly recomended)

  • Line 2 large cookie sheets with parchment paper and preheat oven to 350 degrees. Whisk together flour, baking soda, cinnamon, and salt in a medium bowl. In a separate large bowl, beat both sugars, butter, and shortening together until smooth(I use a stand mixer) Add Vanilla, egg, and banana, beat until well mixed. 2 bananas, medium, mashed
1/4 cup peanut butter, creamy (or crunchy if you prefer)
1/4 cup brown sugar, packed
1 cup quick-cooking oats
1/4 cup flour

Steps:

  • Preheat oven to 350°F.
  • In a medium bowl, mash bananas with the back of a fork. Stir in peanut butter and brown sugar. Then stir in oats and flour until thoroughly combined.
  • Onto a greased cookie sheet, drop cookie dough by heaping teaspoonfuls. Gently flatten cookie mounds to 1/2 inch thickness.
  • Bake for 12-15 minutes or until cookie bottoms are light brown, and tops are no longer shiny.

3/4 cup Butter Flavor Crisco
1 cup firmly packed brown sugar
1 large egg
1 cup mashed ripe banana (2 to 3 medium)
1 3/4 cups quick oats (not instant or old fashioned)
1 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon nutmeg
1/2 cup coarsely chopped walnuts
2 tablespoons Butter Flavor Crisco
1/4 cup mashed banana
1 teaspoon lemon juice
2 cups confectioners' sugar
finely chopped walnuts (optional)

Steps:

  • Heat oven to 350°F.
  • Grease baking sheet; set aside.
  • Cream 3/4 cup Crisco and brown sugar in large bowl at medium speed until well blended.
  • Beat in egg.
  • Add one cup mashed banana.
  • Mix until creamy.
  • Combine oats, flour, salt, cinnamon, baking soda and nutmeg.
  • Stir into creamed mixture.
  • Mix in one half cup nuts.
  • Drop 2 level measuring tablespoonfuls of dough into a mound to form each cookie.
