FETTUCCINI CARBONARA WITH GORGONZOLA
This recipe comes from a Ristorante in San Diego, CA. Prepare sauce while pasta is cooking to ensure that the fettuccine will be hot when the sauce is finished; the heat of the pasta cooks the raw eggs that are tossed with it.

Steps:
- Prepare the sauce while the pasta is cooking to ensure that the spaghetti will be hot and ready when the sauce is finished; it is very important that the pasta is hot when adding the egg mixture, so that the heat of the pasta cooks the raw eggs in the sauce.
- Bring a large pot of salted water to a boil, add the pasta and cook for 8 to 10 minutes or until tender yet firm (as they say in Italian "al dente.") Drain the pasta well, reserving 1/2 cup of the starchy cooking water to use in the sauce if you wish.
- Meanwhile, heat the olive oil in a deep skillet over medium flame. Add the pancetta and saute for about 3 minutes, until the bacon is crisp and the fat is rendered. Toss the garlic into the fat and saute for less than 1 minute to soften.
- Add the hot, drained spaghetti to the pan and toss for 2 minutes to coat the strands in the bacon fat. Beat the eggs and Parmesan together in a mixing bowl, stirring well to prevent lumps. Remove the pan from the heat and pour the egg/cheese mixture into the pasta, whisking quickly until the eggs thicken, but do not scramble (this is done off the heat to ensure this does not happen.) Thin out the sauce with a bit of the reserved pasta water, until it reaches desired consistency. Season the carbonara with several turns of freshly ground black pepper and taste for salt. Mound the spaghetti carbonara into warm serving bowls and garnish with chopped parsley. Pass more cheese around the table.

FETTUCCINE CARBONARA
When a man at church found out how much my family likes fettuccine, he shared his Italian grandmother's carbonara recipe with us. I've made it my own over the last 25 years. Grated Parmesan cheese works just as well as Romano. -Kristine Chayes, Smithtown, New York

Steps:
- Put a large pot of water on the stove to boil. While the water heats up, crumble the cheese and butter into a large bowl along with the garlic, spinach and a very generous crack of pepper. When the water has boiled, add a large pinch of salt and cook the pasta until aldente.
- When the pasta is cooked, add a ladle of the pasta water to the bowl with the ingredients for the sauce. Drain the pasta, add it to the bowl and toss vigorously until the cheese and butter has melted, generously coating the pasta.
- To serve, pour the pasta into a large serving bowl and top with the ball of buratta and a drizzle of olive oil (or if you're fancy like me, make it truffle oil). The real masterpiece is breaking into the ball of buratta and mixing it through the pasta, it's a thing of beauty.
Tips:
- Use high-quality ingredients. This means using fresh pasta, good quality cheese, and flavorful pancetta or bacon.
- Cook the pasta al dente. This means cooking it until it is still slightly firm to the bite.
- Don't overcook the eggs. You want them to be creamy and slightly runny, not scrambled.
- Use a large skillet or saucepan. This will help to prevent the pasta from sticking together.
- Serve immediately. Fettuccine carbonara is best enjoyed fresh out of the pan.
Conclusion:
Fettuccine carbonara with gorgonzola is a delicious and easy-to-make dish that is perfect for a weeknight meal. With its creamy sauce, smoky pancetta, and salty cheese, it's sure to be a hit with the whole family. So next time you're looking for a quick and flavorful pasta dish, give this recipe a try. You won't be disappointed!
