Steps:

1 cup of vegetable oil
1 tsp. vanilla
2 tsp. cinnamon
2 tsp. baking soda

2 cups of chopped Gala Apples
3/4 cup of walnuts/pecans
1/2 dried sweetened cranberries
1/2 cup of raisin (golden or reg.)

Steps:

  • Combine eggs, oil, sugar, cinnamon and vanilla. Slowly mix flour, salt and soda into egg mixture. Mix apples, cranberries, walnuts and raisins. Combine well, mixture will be thick and difficult to mix throughly. Use muscle to do so. Don't worry about crushing the apples - they melt/smoother into the batter beautifully. Before pouring batter into a bunt cake pan (recipe works great also on mini-loafs, loafs, 9x11 bakinh dish, etc.) Coat bottom of pan with a generous helping of butter and evenly sprinkle light brown sugar on the base of the pan. Make sure batter is evenly spread so no disportion of baking occurs. Bake at 350 for 25-30 Minutes. Depending upon wish baking pan is desired, it may take 15-20 minutes longer if batter is cooked in a larger pan. Rule of thumb - check with clean knife and check center of cake and if you get any batter residue, cook for another 10 minutes. Let cool completely before removing from pan.

This is a full flavored cake with a lemony glaze topping which I found to take this cake just over the top of expectations. Of course you can omit the glaze and just serve as a loaf cake for breakfast. The original recipe does not include nuts but I really enjoyed it with some chopped walnuts so I've placed that as optional to this recipe. It also called for raisins but I used Craisins instead. Please note it is very important to use a thicker applesauce for this recipe - using a thin commercial canned sauce can cause the batter to become too thin and not allow the cake loaf to rise properly while baking.
