I got this recipe from Better Homes and Gardens cookbook. This is a very simple recipe, even the kids can pitch in and help, they'll love you for it, I know my just love doing this with me. Its a great way of spending quality time with your children. ENJOY this time, for life passes by so fast. This are lovely memories they will cherish forever. Number Of Ingredients 8

1 1/2 cups quick-cooking rolled oats
1/2 cup flaked coconut
1/2 cup chopped walnuts
1/2 cup all-purpose flour
3/4 cup packed brown sugar
1/2 cup butter or 1/2 cup margarine
2 tablespoons honey
36 glace cherries, mixed colours

Steps:

  • In a large mixing bowl stir together rolled oats, flaked coconut, chopped walnuts, and flour; set aside.
  • In a saucepan combine brown sugar,butter or margarine, and honey,bring mixture to a boil, stirring often.
  • Pour over oat mixture, blending well.
  • For each cookie, press one level tablespoonful mixture into greased 1 3/4 inch muffin pan. (for flatter, crisper cookie place in 2-inch muffin pan).
  • Top each cookie with a candied cherry.
  • Bake at 350°F till well browned, 15-20 minutes (depending on the oven).
  • Cool 10 minutes in pan; remove to rack and let cool thoroughly.
  • Makes about 3 dozen.

1-1/3 cups sweetened shredded coconut
1/3 cup sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
2 large egg whites, room temperature
1/2 teaspoon vanilla extract

Steps:

  • In a small bowl, combine the coconut, sugar, flour and salt. Add egg whites and vanilla; mix well., Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 325° for 18-20 minutes or until golden brown. Cool on a wire rack.

Number Of Ingredients 6

½ pound almond paste
1 cup white sugar
3 egg whites
⅛ teaspoon salt
2 tablespoons cake flour
⅓ cup confectioners' sugar

Steps:

  • Cover cookie sheets with parchment paper or aluminum foil.
  • In large mixing bowl, soften almond paste with your hands or food processor. Mix in white sugar and egg whites until well blended. Mix in the confectioners' sugar, flour, and salt until smooth and well blended.
  • Force dough through a cookie press or drop by teaspoonfuls onto cookie sheets. Cover and let stand for 30 minutes. Preheat the oven to 300 degrees F (150 degrees C).
  • Bake for 25 minutes. Remove foil or parchment from sheets and let cool. Peel off macaroons.
