2 cups water
3 tea bags
1 package (3 ounces) lemon gelatin
4 maraschino cherries
1-1/2 cups whipped topping, divided
4 lemon slices

Steps:

  • In a small saucepan, bring water to a boil. Remove from the heat; add tea bags. Cover and steep for 5 minutes. Discard tea bags. Stir gelatin into tea until completely dissolved. Cool slightly., Pour 1/4 cup gelatin mixture into each of four parfait glasses. Place a cherry in each glass; refrigerate until set but not firm, about 1 hour. Transfer remaining gelatin mixture to a small bowl; refrigerate for 1 hour or until soft-set., Whisk gelatin mixture for 2-3 minutes or until smooth. Stir in 1/2 cup whipped topping; spoon into parfait glasses. Refrigerate for at least 2 hours. Just before serving, top with remaining whipped topping and garnish with lemon slices.

Steps:

  • Hot-Brewed:
  • Bring 8 cups water to a simmer; remove from the heat and add 3 tablespoons loose tea or 6 tea bags. Let steep about 4 minutes, until it's the strength you like. Strain loose tea with a fine-mesh sieve or remove the tea bags. Let cool, then transfer to a pitcher, cover and refrigerate.
  • Cold-Brewed:
  • Combine 8 cups cold water and 6 tablespoons loose tea or 10 tea bags in a pitcher. Cover and refrigerate 15 to 36 hours, until it's the strength you like. Strain loose tea with a fine-mesh sieve or remove the tea bags.
  • Sweet Teas:
  • Combine 3/4 cup each sugar and water in a saucepan and add 1 infuser, if desired. Bring to a simmer over medium heat, stirring until the sugar dissolves, then remove from the heat and let cool. Strain the infused syrup through a fine-mesh sieve (you'll get about 1 cup).

15 ounces lowfat ricotta
2 teaspoons vanilla extract
1 tablespoon granular Splenda (or other sugar substitute, or brown sugar to taste)
4 cups fresh strawberries, hulled and sliced, or 1 cup frozen, sliced
1/4 cup packed fresh mint, chopped, plus 4 sprigs
2 tablespoons balsamic vinegar
1/2 cup crushed whole-wheat graham crackers

Steps:

  • Mix ricotta, vanilla and sugar in a bowl. In another bowl, mix strawberries, mint and vinegar. Spoon 2 tablespoon ricotta mixture into the bottom of 4 parfait or iced tea glasses. Add a layer of crackers, strawberries and another layer of ricotta. Top with remaining strawberries and mint sprigs. Serve immediately or chill up to 4 hours.

  • In a pan, boil the lime juice and zest to reduce by 3/4. Cool
  • Put the egg yolks, sugar and reduced lime juice in a heatproof bowl over a pan of simmering water. Whisk until the mixture is thick, light and at least doubled in volume
  • Remove from the heat and continue to whisk until the mixture cools to room temperature.
  • Fold in the cream and Marsala
  • Whisk the egg whites until they can form stiff peaks. Fold into the mixture. Spoon the mixture into glasses and leave to set in the freezer for at least 2 hours
