Time 42m

Yield 3 1/2 dozen cookies, 42 serving(s)

Number Of Ingredients 14

1 1/4 cups raisins
3 -4 tablespoons Irish whiskey (or water)

1 1/4 cups broken walnut pieces
1/4 cup granulated sugar, for tops of cookies (optional)

Categories     Cookies     Chocolate     Nut     Dessert     Bake     Raisin     Walnut     Bon Appétit     San Francisco     California     Kidney Friendly     Vegetarian     Pescatarian     Peanut Free     Soy Free     Kosher

Yield Makes about 3 1/2 dozen

Number Of Ingredients 14

10 tablespoons (1 1/4 sticks) unsalted butter, room temperature
6 tablespoons solid vegetable shortening
1 cup (packed) golden brown sugar
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
2 cups old-fashioned oats
1 1/2 cups semisweet chocolate chips (about 9 ounces)
1/2 cup chopped walnuts
1/2 cup raisins
Nonstick vegetable oil spray

Steps:

  • Preheat oven to 350°. Using electric mixer, beat butter, shortening, both sugars, eggs and vanilla in large bowl until well blended. Sift in flour, baking soda and salt; beat to blend. Mix in oats, chocolate chips, nuts and raisins.
  • Spray baking sheets with nonstick spray. For each cookie, drop 1 rounded tablespoonful of dough onto sheet, spacing 1 inch apart (do not flatten dough). Bake cookies until golden but still slightly soft to touch, about 15 minutes. Cool cookies on sheets. (Can be prepared 1 day ahead. Store airtight at room temperature.)

Tips:

  • Use room temperature butter. This will help the cookies spread and bake evenly.
  • Don't overmix the dough. Overmixing will make the cookies tough.
  • Chill the dough for at least 30 minutes. This will help the cookies hold their shape in the oven.
  • Use a cookie scoop to drop the dough onto the baking sheet. This will help the cookies be uniform in size and shape.
  • Bake the cookies until they are just set. Overbaking will make the cookies dry and crumbly.

Conclusion:

These Irish oatmeal cookies are a delicious and hearty snack or dessert. They are perfect for a St. Patrick's Day celebration or any other time of year. With their chewy texture, sweet and nutty flavor, and plenty of raisins and walnuts, these cookies are sure to be a hit with everyone who tries them.
