Time 20m

Yield 4 serving(s)

Number Of Ingredients 14

2 whole boneless chicken breasts
2 garlic cloves, minced
1/2 teaspoon gingerroot, minced
1/8 teaspoon salt & pepper
1/4 cup flour
1 egg, beaten
1 cup panko breadcrumbs (japanese bread crumbs)
3 cups oil (for frying)
1/3 cup lemon juice
1/3 cup water
1/3 cup sugar
1/8 teaspoon white pepper
1 tablespoon cornstarch
1 dash salt

Steps:

  • Cut chicken in half and pound to 1/2 inch thickness.
  • Rub chicken with garlic, ginger, salt, and pepper.
  • Coat chicken with flour, dip in beaten egg and press on panko.
  • Deep fry at 350 degrees F, turning once or twice until golden brown on both sides.
  • Combine sauce ingredients and bring to a boil.
  • To serve, cut chicken into bite size pieces and pour sauce over.

Tips:

  • To ensure the chicken is tender and juicy, use boneless, skinless chicken breasts or thighs. Marinating the chicken in a mixture of soy sauce, rice wine, and ginger for at least 30 minutes before cooking will also help tenderize the meat.
  • For a crispy coating on the chicken, double-coat it in cornstarch before frying. Make sure the oil is hot enough before adding the chicken to the pan. This will help prevent the chicken from sticking and ensure it cooks evenly.
  • To make the lemon sauce, use freshly squeezed lemon juice for the best flavor. Add a little sugar or honey to balance out the tartness of the lemon. You can also add a tablespoon of soy sauce or fish sauce for extra umami.
  • Serve the lemon chicken with steamed rice or noodles. You can also add a side of vegetables, such as stir-fried broccoli or green beans.

Conclusion:

Lemon chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. With its crispy coating and tangy lemon sauce, it is sure to be a hit with everyone at the table. So next time you are looking for a quick and tasty meal, give lemon chicken a try. You won't be disappointed!
