1/4 cup butter, softened
3/4 cup sugar
2 egg whites
1 teaspoon vanilla extract
1 cup plus 2 tablespoons cake flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
FROSTING/FILLING:
1/2 cup vanilla or white chips
1 envelope whipped topping mix (Dream Whip)
1/3 cup milk
3 tablespoons seedless strawberry jam
1/2 cup sliced fresh strawberries
1/4 cup drained crushed pineapple

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add egg whites, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; add to creamed mixture alternately with the milk. Pour into two greased 6-in. round baking pans. , Bake at 350° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. , In a microwave, melt vanilla chips; stir until smooth. Set aside to cool slightly. In a small bowl, combine topping mix and milk. Beat on high speed for 2 minutes or until thickened. Beat in jam and melted chips until blended. Cover and refrigerate for 15 minutes or until frosting achieves a spreading consistency. , For filling, in a small bowl, combine 1/2 cup frosting with strawberries and pineapple. 18 tablespoons (2 sticks plus 2 tablespoons) unsalted butter, room temperature, plus more for pans
4 1/2 cups cake flour (not self-rising) plus more for pans
1 1/2 cups whole milk
9 large egg whites, lightly beaten
1 tablespoon pure vanilla extract
1/2 teaspoon almond extract
2 tablespoons baking powder
1 1/2 teaspoons salt
2 1/4 cups sugar
1 pint raspberries
5 to 6 cups Italian Meringue Buttercream for Perfect White Cake

Steps:

  • Preheat oven to 350 degrees. Butter and flour three 9-by-2-inch round cake pans, tapping out excess flour; set aside.
  • In a medium bowl, stir together, milk, egg whites, and extracts. Into a second medium bowl, sift together the flour, baking powder, and salt; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter on medium speed for 30 seconds. With machine running, gradually add the sugar. Continue beating until light and fluffy, about 2 minutes. Scrape down sides of bowl as necessary.

  • Let cakes cool in pans on wire racks for 5 minutes. Run a small metal spatula around the sides of the pan, and invert cakes onto greased racks. Reinvert cakes onto cooling rack. Let cool completely before filling.
  • Place one cake layer on a cake stand. Spread 3/4 cup buttercream evenly over top of cake. Sprinkle with a few raspberries. Top with a second layer. Repeat with a second layer. Top with third cake layer. Insert a few skewers into cake to keep cake from sliding. Spread remaining buttercream evenly over surface of cake. Decorate cake with raspberries. Remove skewers before serving.

I am new to making cakes even though I love to bake. I was originally looking for a yellow cake which this was suppose to be. It wasn't until my daughter's birthday party that we realized that it wasn't a yellow cake but a very soft and yummy white cake. I now realize that most yellow or golden cakes have just yolks in them. This cake will look like it has too much liquid in it but it came out beautifully. Tops best with royal icing of soft and medium consistency. To beat the crumbs use a loose icing layer (royal icing) to cover the cake first. Set in the refrigerator 10-15 minutes. Then go back ice with the real stuff. No more worries about the crumbs. Modified from a web recipe from unknown origins. Butter- I used cheap margarine with salt in it. Milk-1 3/4 cup water & 7/12 cup powdered milk ( 1/3 cup + 6 T)
