Had this at a friend's and decided to scale down the sugar factor. Great for those overnight guests. We also like it with raspberry topping, using fresh or frozen raspberries and brandy.

OVERNIGHT FRENCH TOAST

Overnight French Toast image

If you have a crowd for breakfast, overnight French toast is a winning idea. Instead of standing over the stove, cooking slice after slice, it bakes in the oven and emerges puffed and golden and ready for a big glug of maple syrup. Try making it with a stale loaf that you forgot to eat amid all the other holiday goodies. A fat brioche, fruit-filled panettone or a braided challah all work well. Stay away from croissants, though: Their chewy interiors are best enjoyed fresh.

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 14

2 tablespoons unsalted butter, softened, plus more for baking dish
1 pound enriched bread, such as brioche, challah or panettone sliced 3/4-inch thick
1/4 cup golden raisins (optional)
6 large eggs
2 1/2 cups whole milk
1/2 cup heavy cream
1/3 cup light brown sugar
1/2 teaspoon ground cinnamon
Pinch of freshly ground nutmeg
1/2 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
1/3 cup pecans, chopped (optional)
Confectioners' sugar for dusting (optional)
Maple syrup, for serving

Steps:

  • Butter a 2-quart baking dish. Butter the front sides of the slices of bread and shingle the slices upright in the dish, overlapping as necessary. Nestle the raisins evenly between the slices of bread but not on top.
  • In a large bowl, whisk together eggs, milk, cream, sugar, cinnamon, nutmeg, vanilla and salt until well combined. Pour the milk mixture over the bread and press the bread gently to absorb. Cover with plastic wrap and refrigerate overnight.
  • Heat oven to 350 degrees. Remove the plastic wrap. Sprinkle the pecans evenly over the top. Bake until puffed, golden and set in the center, 50 to 60 minutes. While baking, if the top begins to get too dark, tent with foil. Let stand 10 minutes. Dust with confectioners' sugar and serve with maple syrup.

Yield Serves 4

Number Of Ingredients 11

1 1-pound package frozen unsweetened sliced peaches
1/2 cup (packed) golden brown sugar
1/4 cup water
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
5 large eggs
1/2 cup milk (do not use low-fat or nonfat)
1 teaspoon vanilla extract
8 1/2-inch-thick slices egg bread
3 tablespoons butter
Maple syrup

Steps:

  • Preheat oven to 300°F. Place baking sheet in oven. Combine peaches, brown sugar, 1/4 cup water, cinnamon and nutmeg in heavy medium saucepan. Cook compote over medium heat until liquid is reduced to medium-thick syrup, stirring occasionally, about 15 minutes.
  • Whisk eggs, milk and vanilla in large glass baking dish until well blended. Arrange bread slices in egg mixture. Let stand until egg mixture is absorbed, turning once, about 5 minutes.
  • Melt 1 1/2 tablespoons butter in large nonstick skillet over medium-low heat. Add 4 bread slices to skillet. Cook until golden brown, about 5 minutes per side. Transfer to baking sheet in oven. Repeat with remaining 1 1/2 tablespoons butter and 4 bread slices. Serve with peach compote and maple syrup.

Tips:

  • Use thick-sliced bread: This will help the French toast hold up better to the custard and topping.
  • Make the custard the night before: This will give the bread time to absorb the custard and flavor.
  • Use a non-stick skillet: This will help prevent the French toast from sticking and burning.
  • Cook the French toast over medium heat: This will help the French toast cook evenly and prevent it from burning.
  • Serve the French toast with your favorite toppings: Some popular toppings include butter, syrup, fruit, and whipped cream.

Conclusion:

Overnight French toast is a delicious and easy breakfast or brunch recipe. It's perfect for busy mornings or for entertaining guests. With just a few simple ingredients, you can make a delicious and satisfying meal that everyone will love. So next time you're looking for a quick and easy breakfast or brunch recipe, give overnight French toast a try.
