SEVEN LAYER CRANBERRY BARS

Seven Layer Cranberry Bars image

A fall twist to the original 7-Layer Magic Bars with the addition of bright red autumn cranberries and other fall harvest goodies. These bar cookies are so good with an ooey, gooey texture and sweet, tangy, coconut goodness in every bite.

Provided by Vickie Parks

Categories     Cookies

Time 40m

Number Of Ingredients 8

1/4 cup unsalted butter, melted
3/4 cup graham cracker crumbs
3/4 cup white chocolate chips (or vanilla baking morsels)
1/4 cup semi-sweet chocolate chips
1/4 cup chopped walnuts
1 cup dried cranberries (or craisins)
1 cup sweetened coconut flakes, shredded (loosely filled, not packed)
10 oz sweetened condensed milk (about 2/3 of a 14-oz can)

Steps:

  • 1. Preheat oven to 350°F. Line an 8-by-8-inch baking pan with parchment paper that extends 2 inches on both ends. Lightly spray parchment with no-stick cooking spray; set pan aside.
  • 2. Toss the graham crackers crumbs and butter together with a fork until crumbs are evenly coated.
  • 3. Place crumb mixture in prepared baking pan, and use your fingertips to pat crumbs into a single layer that covers the bottom of the baking pan. Run the back of a large spoon over the surface to form a smooth, flat layer.
  • 4. Evenly sprinkle the white chocolate chips on top. Then add a layer of chocolate chips, nuts, cranberries, and coconut (in that order). Evenly drizzle the condensed milk over the top.
  • 5. Place baking dish in oven and bake for about 22 to 28 minutes, or until lightly golden brown around edges and the center is mostly set. Watch closely in the final few minutes of baking time, because the coconut can burn quite quickly.
  • 6. Place pan on a wire rack to cool in pan for at least 2 hours (or longer) before slicing and serving. Bars will firm up as they cool. Bars will keep airtight at room temperature for up to 1 week, or for up to 6 months in the freezer if wrapped well and kept in airtight container.

THE ULTIMATE SEVEN LAYER BARS

The Ultimate Seven Layer Bars image

This recipe is my version of the standard seven layer bar. As fabulous as the original is, I craved something more. Scrumptiously rich!

Provided by Linda Gable

Categories     Chocolate

Time 25m

Number Of Ingredients 9

1 stick unsalted butter, melted
2 c graham cracker crumbs
1/4 c sugar
1 (14 oz.) can(s) sweetened condensed milk
1-2 tsp pure vanilla extract
1 (11 oz.) pkg semi-sweet or dark chocolate chips (may substitute any flavor of chips, chopped candy, etc.)
1 (11oz.) pkg butterscotch chips (may substitute any flavor of chips, chopped candy, etc.)
1 1/3 c flaked coconut
1 c chopped pecans (may substitute any kind of nut)

Steps:

  • 1. Heat oven to 350 degrees F. (325 degrees F. for glass or dark non-stick pan). Coat a 13x9 inch baking pan with non-stick cooking spray or line with parchment.
  • 2. In small bowl, combine graham cracker crumbs, sugar, and butter. Press into bottom of prepared pan. Mix sweetened condensed milk with vanilla. Pour sweetened condensed milk evenly over crumb mixture. Spread with an offset spatula to completely cover graham cracker crust. Empty chocolate chips and butterscotch chips into a bowl and mix together to combine (this step isn't necessary, but does ensure an equal distribution of chips). If desired, mix coconut and nuts together in the same way as chips to ensure an even distribution. Layer crust with chocolate chips and butterscotch chips; then layer with coconut and nuts. Press down lightly with a fork so that toppings partially sink into sweetened condensed milk.
  • 3. Bake 25 minutes or until lightly browned. Very lightly press mixture with offset spatula to ensure toppings stay in place after cutting. Cool. Cut into bars.
