1 1/4 pounds cooked medium shrimp, peeled
1 ripe mango, peeled, pitted and diced
1 14-ounce can black beans, rinsed and drained
1 head romaine lettuce or 3 romaine hearts, torn into bite-size pieces
Large handful fresh cilantro leaves, chopped

2/3 c brown sugar
1/3 c kosher salt
1/4 c black tea, loose
1/4 tsp cayenne pepper
4 sprig(s) fresh thyme
2 Tbsp fresh ginger, peeled and chopped
16 large shrimp, peeled and deveined
1/4 c olive oil
2 Tbsp lemon pepper seasoning
2 c grilled peach & mango salad, see recipe below
8 sprig(s) fresh mint
4 large lime, cut into quarters
2 c fresh grilled peach & mango salad recipe
1 1/2 c fresh peaches, peeled, pitted and cut into quarters
1 c fresh mango, peeled, pitted and small diced
1/4 c red bell pepper, cut into small dice
1/4 c red onion, cut into small dice
1/4 c fresh mint, thinly sliced
1 1/2 Tbsp fresh cilantro, chopped
1/2 tsp fresh garlic, finely chopped
1/2 tsp serrano chile pepper, seeded and finely chopped
1 tsp orange honey
2 Tbsp olive oil
1 Tbsp balsamic vinegar

Steps:

  • 1. Place the water into a large pot and bring to a boil, add the honey, brown sugar, salt, tea, spices and seasonings; stirring with a whisk to dissolve the sugar. Let the brine cool to room temperature and then refrigerate overnight.
  • 2. Arrange the shrimp in a single layer in a shallow pan and pour the Sweet Tea Brine over the shrimp; cover the pan with saran. Place the shrimp in the refrigerator and marinate for 2 hours turning frequently in the brine.
  • 3. Remove the shrimp from the brine and blot dry with absorbent paper towels. Pour the olive oil over the shrimp and evenly coat with the oil; generously season the shrimp on all sides with the lemon pepper seasonings.
  • 4. Over medium heat lightly spray the grates of a gas grill with non stick vegetable cooking oil. In batches evenly arrange the shrimp on to the grates and grill over a medium hot fire. Cook the shrimp for approximately 3 minutes turning using BBQ tongs. Grill the second side of the shrimp for an additional 2-3 minutes or until the shrimp are fully cooked.
  • 5. Remove the shrimp from the grill and place in a warm area to rest for 4-5 minutes.
  • 6. To serve: In the center of 4 decorative serving platters arrange 1/2 cup of the Grilled Peach and Mango Salad. Attractively arrange 4 shrimp around the perimeter of each platter. Garnish each platter with 2 sprigs of fresh mint and a wedge of lime. Enjoy; happy summer time grilling!!

Place the peach quarters onto the grates and grill over medium high heat for 1-2 minutes on each side or until the peaches are nicely caramelized, frequently brushing the peaches with the molasses mixture while they are grilling.

3/4 lb uncooked shrimp (or how many you want per serving)
2 mangos - peel and slice
3 Tbsp green onion, sliced
1 small head of lettuce
2 Tbsp fish sauce - (gluten free?) try viet huong at many asian markets
1 clove garlic minced or pre-minced from a jar

Steps:

  • 1. 1) Combine green onions, lime juice, fish sauce, sugar, garlic, and green chilli in a bowl.
  • 2. 2) Mix in shredded mango; chill while preparing shrimp.

  • 5. 5) Thread shrimp onto skewers, piercing once near the tail and once near the head Lightly oil grill grate.
  • 6. 6) Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque.
  • 7. 7) Place greens on a platter; mound mango mixture onto the greens using a slotted spoon.
  • 8. 8) Place shrimp over the mango salad and decorate with lime slices, if desired

1/2 cup Major Grey's chutney
2/3 cup fresh lime juice
1/2 cup vegetable oil
1 teaspoon cayenne
1 tablespoon paprika
2 teaspoons ground cumin
2 teaspoons ground coriander seeds
4 garlic cloves, crushed
1-inch piece fresh gingerroot, peeled and chopped
2 fresh serrano or jalapeno chilies, seeded and chopped (wear rubber gloves)
3/4 cup plain yogurt
1 teaspoon freshly grated lime zest (about 1 lime)
2 pounds medium shrimp (about 50), shelled and deveined
1/4 cup vegetable oil for frying
6 cups packed tender watercress sprigs, washed well and spun dry
1 cup fresh coriander sprigs, washed well and spun dry
3 red bell peppers, cut into julienne strips
2 firm-ripe mangoes, peeled and cut into julienne strips

Steps:

  • Make dressing: Force chutney through a sieve into a bowl and whisk in lime juice, oil, cayenne, and salt to taste. Dressing may be made 1 day ahead and chilled, covered. Bring dressing to room temperature before using.
  • Make marinade: In a large non-stick skillet dry-roast paprika, cumin, and coriander seeds over moderate heat, stirring occasionally, until fragrant and several shades darker, about 2 minutes, being careful not to burn them, and transfer to a bowl. Cool spices and stir in remaining marinade ingredients and salt and pepper to taste.
  • Pat shrimp dry and add to marinade, stirring to coat well. Marinate shrimp at room temperature 15 minutes. Alternatively, shrimp may be marinated, covered and chilled, up to 1 day. In a large non-stick skillet heat oil over moderately high heat until hot but not smoking and saute shrimp in batches, turning once, until golden and cooked through, 3 to 4 minutes.
  • Transfer shrimp with tongs to paper towels to drain and cool slightly. In a large bowl gently toss together shrimp, watercress, coriander sprigs, bell peppers mangoes and dressing.
