Time 1h50m

Yield 12

Number Of Ingredients 12

3 (9 inch) unbaked pie crusts
4 eggs
2 cups white sugar
½ cup butter, melted
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1 cup heavy cream
1 ½ cups brown sugar
1 cup heavy cream
½ cup white sugar
2 tablespoons butter at room temperature
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place the pie crusts in 3 pie pans, and set aside.
  • Beat together the eggs, sugar, melted butter, flour, and vanilla extract in a bowl until smooth, and stir in 1 cup of cream. Pour the mixture in equal amounts into the pie crusts.
  • Bake in the preheated oven until the filling has set, about 35 minutes. Let the pies cool, and trim off the excess pie crust down to the top of the filling.
  • Place the brown sugar, 1 cup of cream, and 1/2 cup of sugar in a heavy saucepan over medium-low heat, bring to a boil, and cook, stirring constantly to prevent burning, until a candy thermometer reads 140 degrees F/60 degrees C, or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
  • Remove from the heat, and beat the mixture with a wooden spoon until thickened and cool. Stir in the butter and vanilla extract, and continue beating until the butter is incorporated, about 5 minutes. The icing should be thin and smooth, like a glaze.
  • Spread a thin layer of the caramel glaze on top of each pie, and firmly stack the pies together. Glaze the edges of the stacked pie.

KENTUCKY STACK PIE.

Kentucky stack pie. image

Another of my English Grandmas. My mom asked me to make her one for her 91st birthday. This is a very old recipe dating back to colonial times. Transporting multiple pies to social functions and storage was a challenge . so they stacked. Upon cutting .. Cut thin slices. Its very rich and makes Paula Dean seem like a butter...

This pie is very rich and very yummy. Most people only cut a small sliver at a time due to it's richness. I don't make this often-it's addictive.

Tips:

  • Choose the right pie crust. A pre-made pie crust can save time, but a homemade pie crust will give you a more flavorful and flaky result. If you are making a double-crust pie, be sure to roll out the top crust slightly larger than the bottom crust so that it can be folded over and crimped.
  • Use fresh, ripe fruit. The quality of your fruit will greatly affect the flavor of your pie. When choosing fruit, look for pieces that are plump and brightly colored. Avoid fruit that is bruised or has soft spots.
  • Sweeten the fruit to taste. The amount of sugar you add to your pie will depend on the tartness of the fruit. Start with a small amount of sugar and taste the filling before adding more. You can also add a bit of lemon juice or vinegar to brighten the flavor of the pie.
  • Thicken the pie filling. If you are using fresh fruit, you will need to thicken the pie filling so that it doesn't become too runny. This can be done with a variety of thickeners, such as cornstarch, flour, or tapioca. Be sure to follow the directions on the package of the thickener you are using.
  • Bake the pie until the crust is golden brown and the filling is bubbling. The baking time will vary depending on the type of pie you are making. Check the pie frequently to make sure that it is not overbaking.

Conclusion:

Stack pies are a simple but delicious way to enjoy your favorite fruit pies. They are also a great way to use up leftover pie crust. With a few simple tips, you can make a stack pie that is sure to impress your family and friends.
