I think this salad would also be good with roasted butternut squash instead of pumpkin.

I would love to try this salad with different types of lentils. I think red lentils or black lentils would be a good choice.

I'm not a huge fan of pumpkin, but I really enjoyed this salad. The goat cheese and lentils really balance out the sweetness of the pumpkin.

I found this salad to be a bit bland. I think it needed more seasoning, maybe some salt and pepper.

This salad was a bit too sweet for my taste. I think I would have preferred it with less maple syrup in the dressing.

This salad is a great way to use up leftover pumpkin. I had some roasted pumpkin from Halloween and this was the perfect way to use it up. The salad was easy to make and very tasty.

I made this salad for lunch today and it was delicious! The lentils were perfectly cooked and the pumpkin was roasted to perfection. The goat cheese added a nice tanginess and the dressing was flavorful without being too heavy.
