Steps:
- Preheat oven to 350.
- Sift together flour, baking powder, baking soda, and salt into a bowl.
- In a large bowl, with an electric mixer, cream the butter with the sugars.
- Beat in vanilla, eggs (1 at a time), zest, banana, and sour cream.
- Add flour mixture slowly and beat until it is just combined.
- Stir in the macadamia nuts and coconut.
- Pour batter into a greased (I use butter and a little flour) 9x5x3 inch loaf pan.
- Bake in center of preheated 350 degree oven for 40-50 minute or until tester comes out clean.
Tips:
- Use ripe bananas: The riper the bananas, the sweeter and more flavorful your banana bread will be.
- Don't overmix the batter: Overmixing can make the banana bread tough. Mix just until the ingredients are combined.
- Toast the macadamia nuts: Toasting the macadamia nuts will bring out their flavor and make them more crunchy.
- Use a loaf pan that is at least 9x5 inches: A smaller loaf pan will make the banana bread too thick and dense.
- Bake the banana bread until a toothpick inserted into the center comes out clean: This usually takes about 50-60 minutes.
- Let the banana bread cool completely before slicing: This will help it to hold its shape.
Conclusion:
This coconut and macadamia nut banana bread is a delicious and easy-to-make treat. It's perfect for breakfast, lunch, or a snack. The combination of coconut, macadamia nuts, and bananas is a winning combination that everyone will love.
