1 small pineapple
3 large peaches (firm)
2 large bananas (firm)
3 apples (crisp variety)
1 bunch seedless black grapes
1 large orange, juice and zest of, grated
60 ml brandy (4 Tablespoons) or 60 ml orange liqueur (4 Tablespoons)
50 g unsalted butter (melted, 2 oz)
200 ml plain yogurt (7 fl oz)
45 ml clear honey (3 Tablespoons)
fresh mint sprig

Steps:

  • Peel the pineapple, clean out the "eyes" and dice into small cubes.
  • Peel and pit the peaches and dice.
  • Peel the bananas and slice into thick chunks.
  • Do not peel the apples, do quarter and core them, then cut each quarter in half across-ways.
  • Put all fruit together in a bowl, add the juice of the orange, the rind, liqueur/brandy and mix gently.
  • Leave to marinate for 30 minutes.
  • Thread the fruit pieces onto skewers and brush with the melted butter.
  • Place on the BBQ/Grill for 10-15 minutes turning frequently.
  • To Make the dip, whisk together the yogurt and 30 ml (2 Tablespoons) of the honey.
  • Pour the dip into a serving bowl and drizzle the remaining 15 ml (1 Tablespoon) honey over the top, garnish with mint.
  • Serve the fruit kebabs hot with the yogurt dip.

6 firm apricots
4 slightly firm peaches
4, 1-inch pineapple slices
4 tangerines
4 firm bananas
4 apples
3 Tbs. lemon juice
2/3 cup unsalted butter
1 cup powdered sugar
3 Tbs. Grand Marnier
1-2 Tbs. orange juice
2 Tbs. grated orange rind
1/2 cup heavy cream

Steps:

  • Cut apricots in half and remove pits. Cut peaches in eighths (or quarters, depending on size). Cut pineapple in chunks. Peel tangerine and cut in quarters. Peel bananas and cut into 1-inch chunks. Peel apples and cut into eighths. Put apples, peaches and bananas in bowl with lemon juice and coat thoroughly. Place a mixture of fruits on each skewer.
  • To make sauce, melt butter, sugar, orange juice and orange rind in small sauce pan and stir until melted and then add Grand Marnier. Grill kebabs over medium heat, basting frequently. Combine remaining sauce with 1/2 cup cream and serve with hot kebabs.

1/4 cup unsalted butter, at room temperature
1 vanilla bean
1/4 cup sweetened cream of coconut
1/4 cup heavy cream
4 ounces good quality white chocolate, chopped
1 teaspoon grated lime zest
2 large red-skinned mangoes, peeled and pitted
1 large Hawaiian papaya (about 1 pound) peeled and seeds discarded

Steps:

  • 1. Soak eight 8-inch bamboo skewers in water for 30 minutes. Heat a grill to medium low.
  • 2. Place butter in a small skillet. Split vanilla bean and scrape seeds onto butter and mash with back a spoon. Add scraped pod and melt butter over low heat. Remove from heat and set aside to steep.
  • 3. Heat cream of coconut and heavy cream in a small saucepan over medium heat until simmering. Remove from heat and stir in chocolate until chocolate is melted and smooth. Stir in lime zest. Set aside.

1 banana (thickly sliced just ripe)
100 g strawberries (halved 3 1/2oz)
1 mango (cut into chunks firm ripe)
