Steps:
- Preheat oven to 325°F. Spray 9-inch-diameter springform pan with 2 3/4-inch-high sides with nonstick spray. Line bottom with parchment. Double-wrap outside of pan with heavy-duty aluminum foil.
- Using electric mixer, beat cream cheese, peanut butter, and sugar in large bowl until well blended and fluffy. Beat in sour cream. Beat in eggs 1 at a time, then vanilla. Stir in peanut butter chips. Transfer batter to prepared pan.
- Place springform pan in large roasting pan. Fill roasting pan with enough hot water to come 1 inch up sides of springform pan. Bake cake until slightly firm to touch and top appears dry, about 1 hour.
- Refrigerate cake uncovered until cold, at least 4 hours. (Can be prepared 2 days ahead; cover and keep refrigerated.)
- Cut around pan sides to loosen cheesecake; release sides. Invert cake onto platter; peel off parchment. Brush apricot jam over top of cake. Sprinkle 1 1/2 cups peanut brittle pieces over cake and serve.
Tips:
- Choose the right peanuts. Use raw, unsalted peanuts for the best results. Salted peanuts will make the brittle too salty, and roasted peanuts will make it too soft.
- Use a heavy-bottomed pot. This will help to prevent the sugar from burning.
- Cook the sugar mixture to the right temperature. The ideal temperature is 300 degrees Fahrenheit. If the sugar mixture is too hot, it will burn. If it is not hot enough, it will not harden properly.
- Stir the sugar mixture constantly. This will help to prevent it from burning.
- Add the peanuts at the right time. Add the peanuts to the sugar mixture when it has reached 300 degrees Fahrenheit. If you add them too soon, they will burn. If you add them too late, they will not have time to coat with the sugar.
- Spread the brittle out evenly. Pour the brittle onto a greased baking sheet and spread it out evenly. If the brittle is too thick, it will not harden properly.
- Let the brittle cool completely. Allow the brittle to cool completely before breaking it into pieces. If you break it too soon, it will be too soft and sticky.
Conclusion:
Peanut butter peanut brittle is a delicious and easy-to-make treat that is perfect for any occasion. With just a few simple ingredients, you can create a sweet and crunchy snack that everyone will love. So next time you are looking for a special treat, give peanut butter peanut brittle a try!
