1 (10 ounce) bag reeses peanut butter chips, divided
1 1/2 cups butter
1 3/4 Splenda sugar substitute or 1 3/4 sugar
3 tablespoons light corn syrup
3 tablespoons water

Steps:

  • Grease a 15 1/2 x 10 1/2x1-inch jellyroll pan (or 13x9, for thicker brittle).
  • Sprinkle 1 cup of chips evenly on pan; set aside.
  • Melt the butter in a 2 quare saucepan.
  • Stir in the sugar, water, and corn syrup.
  • Bring to boil.
  • Cook on medium heat, constantly stirring until mixture reaches 300°F on candy thermometer (about 30 to 35 minutes).
  • (Do not let thermometer bulb rest on bottom of pan).
  • Remove pan from burner.
  • Immediately spread mixture into greased pan.
  • Add remaining 2/3 cup peanut butter chips.
  • Let cool; remove the candy from pan.
  • Break into pieces and store in cool dry place.

2 cups peanut butter
1 1/2 cups granulated sugar
1 1/2 cups light corn syrup
1/4 cup water
2 tablespoons butter
2 cups raw peanuts
1 1/2 teaspoons baking soda
1 teaspoon vanilla extract

Steps:

  • In top of double boiler, warm peanut butter over low heat.
  • Butter 2 large baking sheets.
  • Butter sides of a heavy 3 quart pan, combine sugar, corn syrup, and water .
  • Cook and stir over medium high heat till it comes to a boil --
  • Clip candy thermometer to side of pan and cook till mixture reaches 275* (about 15 minutes).
  • Reduce heat to medium and add 2 tbls butter stirring just until melted.
  • Add peanuts and cook and stir for 5 more minutes until candy starts to turn brown and thermometer reads 295*.
  • Remove from heat and remove thermometer
  • Quickly sprinkle baking soda over mixture stirring constantly.
  • Stir in vanilla.gentlly stir in warmed peanut butter.till it is well combined.
  • Immediately pour candy onto prepared sheets.working quickly spread as thin as possible.
  • When cool, break into pieces.

1 2/3 c peanut butter chips,divided
1 1/2 c butter
1 3/4 c sugar
3 Tbsp light corn syrup
3 Tbsp water

Steps:

  • 1. Butter 15-1/2x10-1/2x1 inch jelly roll pan. sprinkle 1 cup peanut butter chips evenly onto bottom of prepared pan, set aside.
  • 2. Melt butter in heavy 2-1/2-quart saucepan, stir in sugar, corn syrup and water. Cook over medium heat, stirring constantly until mixture reaches 300 degrees on candy thermometer, this should take 30 to 35 min.
  • 3. Remove from heat. immediately spread mixture in prepared pan, sprinkle with remaining 2/3 c. peanut butter chips. Cool completely. Remove from pan. Break into pieces. Store in container.

Nonstick vegetable oil spray
2 8-ounce packages cream cheese, room temperature
1 1/4 cups creamy peanut butter (do not use old-fashioned style or freshly ground)
1 cup sugar
3/4 cup sour cream
3 large eggs
2 teaspoons vanilla extract
1 11-ounce package peanut butter chips
1 tablespoon apricot jam, warmed
1 1/2 cups chopped Peanut Brittle

Steps:

  • Preheat oven to 325°F. Spray 9-inch-diameter springform pan with 2 3/4-inch-high sides with nonstick spray. Line bottom with parchment. Double-wrap outside of pan with heavy-duty aluminum foil.
  • Using electric mixer, beat cream cheese, peanut butter, and sugar in large bowl until well blended and fluffy. Beat in sour cream. Beat in eggs 1 at a time, then vanilla. Stir in peanut butter chips. Transfer batter to prepared pan.
  • Place springform pan in large roasting pan. Fill roasting pan with enough hot water to come 1 inch up sides of springform pan. Bake cake until slightly firm to touch and top appears dry, about 1 hour.
  • Refrigerate cake uncovered until cold, at least 4 hours. (Can be prepared 2 days ahead; cover and keep refrigerated.)
  • Cut around pan sides to loosen cheesecake; release sides. Invert cake onto platter; peel off parchment. Brush apricot jam over top of cake. Sprinkle 1 1/2 cups peanut brittle pieces over cake and serve.
