Steps:

  • Adjust oven racks in the upper-third and lower-third positions. Preheat the oven to 375 degrees F. Line two baking sheets with parchment paper.
  • Break the almond paste into small pieces and add it to the bowl of a food processer along with the sugar, cocoa powder and salt. Process until the almond paste is very finely chopped and well incorporated with the salt and sugar. Add the egg whites and vanilla, and process until a smooth dough forms, about 30 seconds. With a small scoop or spoon, dollop the batter onto the baking sheets, 1 tablespoon at a time, spaced 2 inches apart. Top each cookie with a few almond slivers and sprinkle with sanding sugar.
  • Bake until the cookies have risen and cracked slightly but are still soft in the center, 13 to 14 minutes; rotate the baking sheets halfway through. Allow the cookies to cool completely on the baking sheets. Store in an airtight container.

Steps:

  • Preheat the oven to 350 degrees F.

2 tablespoons granulated sugar
1 tablespoon flour

3/4 cup flour
1/2 cup firmly packed light brown sugar
1/4 cup granulated sugar
3/4 cup crushed amaretti cookies (about 16 cookies)

  • Position an oven rack in the center of the oven and lay a sheet of aluminum foil on the rack below to catch drippings. Preheat the oven to 375°F.

2 Tbsp. sugar
1/8 tsp. salt
1 large egg
8 firm, ripe small peaches, halved lengthwise and pitted
8 oz. mascarpone cheese

Steps:

  • Put oven rack in middle position and preheat oven to 350 degrees. Melt 2 Tbsp. butter and pour into a 13 x 19 inch glass or ceramic baking dish. Pulse 3/4 cup crumbled amoretti in a food processor until finely chopped, then add flour, sugar, salt, and remaining 2 Tbsp. butter. Blend until butter is incorporated, then add egg and blend until smooth.
  • Scoop out just enough peach pulp from center of each peach half with a melon ball cutter or small spoon to create a 1" deep cavity. Arrange peaches, cut sides up, in baking dish, then brush skins with melted butter from dish. Divide amaretti mixture among cavities, then sprinkle remaining 1/4 cup crumbled amoretti over filling. Bake until filling is puffed and crisp, 40 to 50 minutes. Serve warm or at room temp.
  • Wisk mascarpone with a few tablespoons of milk until it reaches a consistency suitable to dollop on peaches. Spoon on 1 Tbsp. per peach.

Steps:

  • Puree raspberries with syrup in blender. Strain puree into medium bowl; discard seeds. Cover; chill. (Can be made 2 days ahead. Keep chilled.)
  • Line 7- to 8-cup loaf pan or other mold with 2 layers of plastic wrap, leaving long overhang. Freeze pan. Using electric mixer, beat egg whites in medium bowl until soft peaks form. Add 1/4 cup powdered sugar; beat until stiff but not dry. Using same beaters, beat cream and remaining 3/4 cup powdered sugar in large bowl until peaks form. Fold in lemon peel and cinnamon. A delicious Italian classic often also made with peaches, but I prefer it with apricots. The apricots are filled with amaretti cookies, amaretto, sugar and egg yolk and baked in the oven with white wine. They can be served warm or at room temperature and are delicious paired with vanilla ice cream or white chocolate mousse. However, I also love them on their own. They were a big hit at a party I catered for. However, at the party I had far too much filling for the apricots. Maybe I've made a mistake when multiplying the recipe. I will try it out again and make changes to the recipe if necessary.

6 -8 apricots (but have some extra ones ready)
80 g amaretti cookies (2 7/8 ounces)
80 g sugar (2 7/8 ounces)
1 egg yolk
1/4 cup Amaretto
1/3 cup white wine
butter, for greasing
12 blanched almonds

  • Please note: I will have to check the amount of filling and the amount of apricots again, which I will do soon. If you decide to make it, please have some extra apricots ready.
  • Preheat oven to 180°C (355°F).
  • Put amaretti cookies into a small bowl and pour the amaretto over it.
  • Wash apricots and cut them in halves. Discard the stone.
  • Using a spoon, take out some of the fruit flesh without hurting the skin. Roughly chop the fruit flesh.
  • Add sugar, egg yolk and chopped apricot flesh to the amaretti cookies and mix. While mixing, crush the cookies with a spoon. Do not mix for too long; it's nice to have some cookie chunks.
  • Fill the apricots with the mixture, ca 1 tablespoon per half.
  • Put into a well buttered oven-proof baking dish.
  • Pour white wine over apricots.
  • Bake for ca 25 minutes or until done.

  • Stir chocolate in top of double boiler set over simmering water until melted and smooth. Using on/off turns, blend almonds, amaretti, cinnamon, and salt in processor until finely ground.   • For topping:

2 cups milk
2 cups heavy cream
8 extra-large egg yolks
1 cup superfine sugar
Pinch of salt
1/2 teaspoon pure vanilla extract
3 cups (about 7 ounces) amaretti cookies, lightly crushed

Steps:

  • Place white chocolate in a small bowl set over a saucepan of gently simmering water. Stir occasionally until melted; set aside.
  • Combine the milk and cream in a small saucepan set over low heat, and cook until scalded or when bubbles start to form on the edge. Turn off heat.
  • Place the egg yolks, sugar, and salt in the bowl of an electric mixer fitted with the paddle attachment, and beat on high speed until light yellow, about 3 minutes. On low speed, slowly add the scalded milk and cream, and beat until combined.
  • Transfer the mixture into a clean medium saucepan, and cook, stirring constantly with a wooden spoon, over low heat until slightly thickened and the mixture coats the back of the spoon, about 5 minutes. EASIEST AMARETTI COOKIES EVER

These crisp cookies are naturally gluten and dairy free. Preparation takes only 10 minutes and is very easy. If you press in an Amarena cherry before baking, cookies will be more chewy than crisp. 1 large egg white
1 cup almond flour
1/3 teaspoon almond essence

Steps:

  • Stir sugar and egg white until sugar has dissolved.
  • Stir in amond flour and almond essence, but be careful: this mixture is too tough for a handmixer! I just dump everything in my bread machine and run the 'dough' program for a while until the dough is mixed evenly. A good food processor might do the job too ;-) Or just mix it thoroughly with a rubber spatula.
  • Spoon the mixture into a cookie press to shape small round cookies or use a small ice cream scoop to form little balls.
  • Place cookies 1/2 inch apart on greased cookie sheet or silpat.

3 cups mascarpone
3 Tbsp. dark rum
1/4 tsp. kosher salt
1 cup espresso or very strong coffee

2 Tbsp. unsweetened cocoa powder

Steps:

  • Whisk egg yolks in a medium bowl to blend, then gradually add sugar, whisking constantly until mixture is thick, smooth, and pale yellow. Using a rubber spatula, gently fold in mascarpone, rum, and salt; set aside.
  • Place espresso in a small bowl. Working in batches, gently mix and turn cookies in espresso 20 seconds to soak. Divide cookies among glasses and top each with 1/2 cup mascarpone mixture. Chill at least 1 hour.

5 firm but ripe pears, peeled, halved
2/3 cup crumbs from amaretti cookies (Italian macaroons) or almond biscotti
1 large egg yolk
7 tablespoons sugar
6 tablespoons fresh lemon juice
3 tablespoons unsalted butter
1 cup chilled whipping cream
2 tablespoons almond liqueur

Steps:

  • Preheat oven to 375°F. Butter 13x9x2-inch glass baking dish. Using melon baller or small spoon, core each pear half, leaving 1 1/2-inch-diameter cavity. Arrange 8 pear halves, cut side up, in prepared baking dish. Puree remaining 2 halves in processor. Place 1/2 cup puree in medium bowl (reserve any remaining puree for another use). Mix cookie crumbs and yolk into puree in bowl. Mound filling in pear cavities.
  • Combine 6 tablespoons sugar, lemon juice and butter in small saucepan. Bring to boil over medium heat, stirring until sugar dissolves and butter melts. Spoon syrup over pears.
  • Bake pears until tender, basting occasionally with syrup in dish, about 1 hour. (Can be prepared 3 hours ahead; let stand at room temperature.)
  • Whip cream with liqueur and remaining 1 tablespoon sugar in medium bowl until soft peaks form. Serve pears with whipped cream.

2 tablespoons fresh lemon juice
2 tablespoons sugar
Coarse salt

Steps:

  • Preheat oven to 375 degrees. In a 9-by-13-inch baking dish, toss pears with lemon, sugar, and a pinch of salt; arrange pears in dish, cut side down. Add 1/4 cup water; cover dish tightly with aluminum foil, and bake until pears are easily pierced with the tip of a paring knife, 25 to 30 minutes.
  • Place each pear half, cut side up, on a platter, and top with 1 tablespoon of mascarpone and 1 crumbled cookie. Drizzle with juices from baking dish, and serve.

5 tablespoons sugar, divided
1/2 pound mascarpone (about 1 cup) at room temperature
Pinch of salt
1/2 cup chilled heavy cream
1 cup brewed espresso or very strong brewed coffee, cooled to room temperature
5 ounces amaretti (crisp Italian macaroons; 30 to 40, depending on size)

Steps:

  • Beat together yolks and 2 tablespoons sugar in a large bowl with an electric mixer at medium speed until thick and pale, about 2 minutes. Beat in mascarpone until just combined.

Make another layer in same manner with remaining amaretti (dipped in espresso) and mascarpone mixture. Chill at least 6 hours.
